Making Picture Perfect Tacos – La Justina

Monday, August 24th was an early morning for Chad. Photographer Jim Sullivan arrived bright and early to start filming a day in the life. the schedule included following Chad around as he created a new special for La Justina using local and seasonal ingredients.

SCHEDULED PIT STOPS:

  • Mercado Hidalgo – Tijuana
  • Tortas Wash Mobile (Lunch break)
  • La Justina

Mercado Hidalgo is a market open to the public that brings together several local purveyors of produce, fish, cheese and knick knacks in a colorful open setting smack dab in the middle of the city. This is definitely a must go to while visiting Tijuana. Chef’s picks? Huitlacoche (corn fungus), Squash Blossoms, Queso Fresco from the Cheese Cave.

Before Heading to La Justina, we stopped in for a quick bite for lunch at one of Chef’s favorite sandwich carts, Tortas Wash Mobile. Don’t be fooled. Corner carts are a staple for good eats throughout Mexico and Tortas Wash Mobile is a well-known stand for chefs and in-the-know foodies. Unfortunately, Chad wasn’t totally prepared for the saucy, juiciness of his torta. Another white t-shirt bites the dust.

That’s what aprons are for and of course we always have those on hand for any impromptu photo shoots. 😉 At Chad’s Tijuana restaurant, La Justina, he and Chef Marco put together one amazingly flavorful (and beautiful) dish… Calabaza Cuatro Caminos (Squash Four Ways). That was it… a quick trip and back. Another day in a Chef’s Life.
